Super Quick Pasta

This one pot creamy spinach artichoke pasta is the ultimate weeknight pasta dinner. It comes together super quick, uses a few great pantry staples, and has your starch, protein, and veggies all in one!

As I get closer to having my second baby, I’ve challenged myself to have a solid list of 20-25 minute dinners at the ready. My criteria has been each recipe must be easy to make, nutrient dense, and delicious as heck. If it doesn’t meet all three criteria, it’s back to the drawing board. This recipe was the first to hit every mark. This pasta dish in particular is made of mostly pantry staples, making it a great option for an easy, weeknight dinner. I have a feeling we’ll be turning to this one a lot this Summer after baby number two arrives!

To make this speedy spinach and artichoke pasta, you’ll need the following ingredients:

  • Dried pasta
  • Baby spinach
  • Jarred pesto
  • Lemon juice and zest
  • Marinated artichokes
  • Grilled or rotisserie chicken
  • Burrata cheese
  • Red pepper flakes
  • Flaky salt

Recipe Details

This recipe is a perfect culmination of a one-pot dinner meets semi-homemade deliciousness. To make this pasta dish, you’ll first boil and drain a pound of dried noodles in some salty water. From there, you’ll add the drained noodles back into the pot you boiled them in and mix in a jar of prepared pesto with a few handfuls of baby spinach, lemon juice, and lemon zest. 

To the same pot, you’ll mix in some shredded chicken and chopped marinated artichokes. Lastly, break open a couple balls of burrata cheese. Let the cream in the center of the cheese coat the noodles and then break the outer layer of cheese into bite-sized pieces. Finish the pasta with a pinch of flaky salt and red pepper flakes, to taste, and enjoy!

Instructions

  1. Boil and drain the pasta in salty water according to the package directions. Return the drained pasta to the warm pot.

  2. Turn the heat under the pot onto the lowest setting and add the baby spinach, jarred pesto, lemon juice, and lemon zest to the pan. Stir to coat the pasta in the pesto, letting the residual heat from the pan wilt the spinach.

  3. Add the chopped marinated artichokes and chicken to the pot and stir to combine everything together.

  4. Break open the balls of burrata cheese over the pot of pasta, using your hands to shred the cheese into bite-sized bits. Add a pinch of salt and red pepper flakes to the pot and stir to combine everything together once more. Enjoy!
