This simple stracciatella pasta recipe is incredibly simple but is so comforting. Just a handful of ingredients results in an irresistible bowl of pasta that will definitely leave you wanting seconds. The noodles are tossed in an olive oil based sauce made with shallots, garlic and red pepper flakes. Then everything is topped with fresh stracciatella cheese, flaky salt, and freshly ground black pepper.

If you’re not familiar with stracciatella cheese, it’s a creamy variation of mozzarella. If you’ve ever broken open a ball of burrata, it’s the gooey center. This recipe just calls for that creamy center, making for a rich bowl of pasta without having to cut through the outer shell of mozzarella. If you can’t find mozzarella at your grocery store, don’t worry! It’s super easy to make it yourself. Just do a little prep work a few hours before you’re ready to eat.

Stracciatella Pasta Recipe Tips

When you make this simple stracciatella pasta recipe, here are a couple tips to make sure it turns out delicious:

  • When cooking long noodles, like linguine or fettuccine, I prefer using a pair of tongs than using a spoon. It makes it easy to grab and stir the noodles for cooking and serving.
  • Speaking of utensils, be sure to use ones that are wooden or silicone on the end. Metal spoons or spatulas can leave scratches on your pans, making them wear out faster.

Stracciatella Pasta Recipe Details

Boil the Noodles

To start this recipe, you’ll begin by boiling the noodles in some salty water. Cook the noodles according to their package directions. Then before draining the noodles into a colander, reserve a cupful of the pasta water. This will be used to build out the pasta sauce at the end. 

Heat the Oil and Aromatics

While the noodles are boiling, place a heavy-bottomed saute pan over medium-low heat on the stove. Pour a half cup of olive oil into the saute pan and let the oil heat it for a few seconds. Once the oil begins to shimmer, add the minced shallot. Saute the shallot for a couple minutes, until it’s softened and becomes very fragrant.

Add the minced garlic and a pinch of red pepper flakes to the saute pan with the shallots. Cook all of the aromatics for one additional minute, until the garlic is very fragrant. At this point, the noodles should be cooked and you’ll be ready to finish this pasta dish.

Finish the Pasta and Serve

Transfer the drained noodles into the saute pan with the oil. Be careful during this step! The water left on the noodles will sizzle in the hot oil when it hits. Add a splash of the reserved pasta water to the noodles, about a tablespoon. Toss the noodles in the oil and aromatics and take the pan off of the heat.

Divide the pasta and olive oil among four plates and top each with a couple spoonfuls of homemade stracciatella cheese. Drizzle a bit of olive oil over the top, plus a sprinkle of flaky salt, and freshly cracked pepper. Enjoy this meal with a simple tomato salad and a crisp glass of white wine for a perfect evening!

  1. Boil the linguine noodles in salty water according to the package directions. Reserve some of the pasta water in a heat proof glass before draining the noodles.

  2. While the noodles are boiling, turn the heat under a heavy-bottomed saute pan to medium-low heat. Pour the olive oil into the saute pan and heat it for 10-20 seconds. Add the minced shallot to the oil. Saute the shallot for 2-3 minutes, until they’ve softened and become very fragrant.

  3. Add the minced garlic and a pinch of red pepper flakes to the saute pan. Stir and cook the aromatics for 1 minute.

  4. Carefully add the drained noodles to the saute pan with the oil, noting it may sizzle slightly as the water on the noodles hits the oil in the pan. Add a splash of the reserved pasta water to the noodles and stir to coat in the oil.

  5. Divide the pasta among plates and top with a couple spoonfuls of stracciatella cheese. Drizzle a bit of olive oil over the top, plus a sprinkle of flaky salt and freshly cracked pepper. Enjoy!
