Recipe Details
Roast the Salmon
To get this recipe started, you’ll first roast the salmon. Place a large filet of salmon onto a small backing sheet and drizzle a bit of olive oil over the top. Season the filet with salt, pepper, and garlic powder before place the baking sheet in the oven.
Roast the salmon for about 15 minutes, until it’s cooked through in the center. At the point, also make sure your farro is boiling according to the package directions and the green beans are steamed.
Make the Green Bean Farro Salad
While the salmon is roasting in the oven, make the green bean farro salad. The first step in making the salad is to whisk the dressing. Add a drizzle of olive oil, apple cider vinegar, dijon mustard, and lemon juice to a large mixing bowl. Season the dressing with salt, pepper, and red pepper flakes then use a whisk to bring the ingredients together.
To the large mixing bowl, add the green beans, baby spinach, fresh parsley, green onions, and drained farro. Toss to coat the farro and veggies in the dressing, letting the heat from the farro wilt the spinach.
Add the feta cheese and halved cherry tomatoes to the farro salad and toss once more to bring everything together.
Finish the Dish and Enjoy
To serve this dinner, divide the green bean farro salad into equal portions. Slice the roasted salmon into individual portions, cutting across the grain of the filet. Arrange each piece of salmon on top of the farro salad. Drizzle a little honey over the top of each piece of salmon and garnish each plate with an additional crumble of feta cheese.

Roast the Salmon Filet

Preheat the oven to 425°F and set out a small sheet tray.

Place the salmon filet on the sheet pan and drizzle with the olive oil. Season the salmon filet with the salt, garlic powder, and pepper. Roast the salmon for 15 minutes, until cooked through in the center.Â
Prepare the Green Bean Farro Salad

In a large mixing bowl, drizzle in the olive oil, apple cider vinegar, dijon mustard, and lemon juice. Season with salt, pepper, and red pepper flakes. Whisk the dressing until the oil is fully integrated with the rest of the ingredients.Â

Add the steamed green beans, chopped baby spinach, chopped parsley, green onions, and prepared farro to the mixing bowl. Toss to coat the farro and vegetables in the dressing, letting the heat from the farro wilt the spinach slightly.
