Cozy Kielbasa Soup
This kielbasa potato soup is a big bowl of comfort! The garlicky kielbasa pairs so nicely with the buttery, earthy golden potatoes in this soup recipe. It’s built out with a classic soup start of onion and celery, a tomatoey base, and finished with lots of fresh dill and sour cream. It’s a great soup dish to make on a cool evening and enjoy with a crusty piece of bread and a hearty autumn salad.

- Mini golden potatoes

- Low sodium chicken broth
- Fresh dill
- Freshly cracked black pepper

Can I make this soup in advance?
- A: Definitely! Prepare the soup and then refrigerate it in an air-tight container. Reheat the soup on the stove top before serving or microwave individual portions stirring every 30 seconds until the desired temperature is reached.
Is it ok to substitute with a different type of potato?
- A: Yes! Mini red potatoes would be a great substitute. Or full sized golden potatoes would work as well, just be sure to cut them down into smaller pieces.
Can I use dried dill instead of fresh?
- A: I definitely recommend using fresh, not dried.

Kielbasa and Golden Potato Soup Recipe Tips
When you make this kielbasa potato soup, here are a couple tips to make sure it turns out delicious:
- Never rush making a pot of soup! Letting the ingredients cook thoroughly at each step will build flavor on top of flavor. Browning the kielbasa well, and then sweating the vegetables until they’re soft and caramely will make the end result taste that much better!
- To give the soup more texture, I sometimes like to smash some of the potatoes against the side of the pot once they’re softened. It adds a slightly thicker texture to the soup. This step is definitely not required, but one to consider if it sounds tasty to you!

Recipe Details
Start the Soup
To start this soup recipe, you’ll first brown the kielbasa in a large dutch oven or soup pot. Pour a glug of olive oil into the dutch oven and add the sliced kielbasa in a single layer. Brown the sausage until they’re nice and brown on the bottom. Give them a stir and brown on the second side for a couple minutes more.
Next, add the minced garlic, chopped celery, and chopped onion to the pot with the sausage. Stir to combine everything together and cook until the vegetables begin to soften. After a few minutes, add the mini golden potatoes, plus a pinch of black pepper and kosher salt. Cook everything in the dutch oven, stirring every few minutes, until the onion is very soft and the potatoes just begin to soften.
Scoop the tomato paste into the dutch oven and stir to coat the potatoes in the tomato paste. Continue to cook the soup for a couple minutes more, until the tomato paste deepens in color.

Simmer the Soup and Serve
Once the base of the soup is prepared, pour the chicken broth into the dutch oven. Bring the soup to a simmer and let it cook for half an hour, until the potatoes are fork tender. Take the dutch oven off of the heat.
Stir the chopped fresh dill into the warm soup. Taste the kielbasa potato soup and adjust the salt and pepper levels to your taste. Serve this kielbasa and potato soup with a large dollop of sour cream, a drizzle of high quality olive oil, some freshly cracked black pepper, and more fresh dill.

Brown the Kielbasas

- Preheat a large dutch oven or soup pot over medium heat. Pour the olive oil into the dutch oven and add the sliced kielbasa in a single layer across the bottom of the pan. Brown the kielbasa in the dutch oven, undisturbed, for 5 minutes. Stir the kielbasa, flipping the pieces to the other side, and brown for another 2-3 minutes more.
Add in the Aromatics and Potatoes

To the dutch oven with the kielbasa in it, add the minced garlic, chopped celery, and chopped onion. Stir to combine the ingredients together and cook, stirring occasionally, until the vegetables begin to soften. About 5 minutes.

Add the mini golden potatoes, plus the black pepper and kosher salt, to the dutch oven. Cook everything in the dutch oven, stirring regularly, until the onion is very soft and the potatoes just begin to soften. Around 5-7 minutes.

Scoop the tomato paste into the dutch oven. Stir to coat the potatoes and aromatics in the tomato paste. Continue to cook the soup base, until the tomato paste deepens in color, about 2 minutes.
Simmer the Soup and Serve

Pour the chicken broth into the dutch oven and bring it to a simmer. Simmer the soup for 30 minutes, until the potatoes are fork tender. Remove the dutch oven from the heat.

Stir the chopped fresh dill into the soup. Taste and adjust the salt and pepper levels to your taste, if needed.
