Brighten Up a Wintery Day

Citrus season is the highlight of winter in my opinion. The bright flavors lift up your spirits on those cold wintery days!  This citrus burrata salad with crispy shallots and burrata is the perfect refreshing salad recipe!

It’s maybe a fault of mine, but I love adding burrata to meals. It genuinely can make (almost) every plate of food better and this salad is no exception. The oranges and grapefruit are so bright, the crispy shallots give a perfect spiced crunch, and the burrata creates a creamy sauce to top it all off.

Tips for a Successful Recipe

Thinking about making this citrus burrata salad?  Here are a few tips to help make sure you’re successful:

  • When frying the shallots, watch the heat so they don’t get burnt. If when you add the shallots to the pan, they start to get brown immediately, turn the heat down to low and stir the shallots frequently so that they slowly turn golden brown.
  • This salad is best served immediately.  If preparing ahead of time, keep all components separate and plate right before servings to keep the components fresh.
  • If you like a little extra spice, sprinkle an extra bit of red pepper flakes on the salad before serving!

Recipe Details

Prepare the Citrus

Preparing this salad is so simple and comes together in a few minutes.  To prepare, first slice and measure your ingredients.  Slice the shallots, measure the oil and vinegar, and set out the citrus fruits and cheese.  Peel the oranges and grapefruit and slice crosswise into quarter-inch slices.  Remove any white pithy bits and seeds from the slices and discard.

Fry the Shallots

After preparing your ingredients, fry the shallots. Warm a skillet over medium heat for a few minutes and then add the olive oil.  Warm the oil for about 30 seconds and then carefully add the shallots to the pan. Let fry for about 3 minutes, or until they’re crisp and golden brown.  Once browned, remove the shallots and place on a paper towel-lined plate and set aside.

Assemble the Citrus Burrata Salad

Now that all of your ingredients are prepared, you can begin to assemble your salad. First, arrange the slices of citrus fruits into a single layer.  Break open the ball of burrata into smaller pieces and arrange over the citrus.  Drizzle oil and vinegar over the plate and sprinkle salt, pepper, sliced chives, and the crispy fried shallots.  Serve immediately and enjoy!

Description

A citrus salad of oranges and grapefruit, topped with crispy fried shallots, creamy burrata, and a simple vinaigrette.

Ingredients

Instructions

Prepare the Ingredients

  1. Slice the two oranges and one grapefruit crosswise into ¼ inch slices.  Remove the seeds and any pithy parts from the slices and set aside.

Fry the Shallots

  1. Heat a small skillet over medium heat.  Once hot, add 2 tablespoons olive oil and wait for the oil to heat, about 30 seconds. Add the thinly sliced shallots to the pan with a pinch of red pepper flakes, and let fry, adjusting the heat if the shallots get dark too quickly.  Let the shallots fry for 2-4 minutes until golden brown.  Remove the shallots with a slotted spoon and onto a paper-towel lined plate.  Set aside.

Arrange the Salad and Enjoy

  1. On a serving plate, arrange the orange and grapefruit slices into a single layer. Break the ball of burrata into pieces and arrange over the citrus slices.

  2. Drizzle the olive oil and sherry vinegar over the orange, grapefruit, and burrata.  Sprinkle the flaky salt, freshly cracked black pepper, and a small pinch of red pepper flakes over the dish to taste.

  3. Arrange the fried shallots over the dish, serve immediately, and enjoy!  If there are any leftovers, separate the pieces of burrata from the citrus and store it separately.
