A Simply Perfect Pizza

This stracciatella pizza is simply delicious! A handful of ingredients come together to make a perfect doughy, sauce, cheesy bite of pizza. The creamy stracciatella compliments the acidic tomatoes so nicely. And then it’s finished with some herby fresh basil, olive oil, flaky salt, and a bit of red pepper flakes if you’d like. This may just be my dream pizza! It’s one that I could never get tired of.

The Supplies

Ingredients

To make this margherita stracciatella pizza, you’ll need the following ingredients:

  • Fresh pizza dough
  • Semolina or all purpose flour
  • High quality olive oil
  • Canned peeled tomatoes
  • Kosher salt
  • Stracciatella, store bought or homemade
  • Fresh basil
  • Flaky salt
  • Crushed red pepper flakes

Equipment

In order to make this stracciatella pizza recipe, you’ll need the following pieces of equipment:

  • Large baking sheet or pizza pan. To bake the pizza on.
  • Rolling pin. This is a great rolling pin for simple tasks, like rolling out this pizza dough.
  • Mixing bowl. To make the simple tomato sauce.
  • Wooden spoon. For crushing the tomatoes.
  • Cutting board and knife. This classic chef’s knife is perfect for slicing the fresh basil.
  • Measuring spoons. My favorite measuring spoons for spices.

What should I use the remaining tomatoes for?

  • A: Save the remaining crushed tomatoes to make additional pizzas or add it to a marinara sauce. If you don’t use the tomatoes right away, put them in a glass air tight container and store in the refrigerator for up to 5 days.

Can I use pre-baked pizza crust?

  • A: You can! If a pre-baked pizza crust is your best option, reduce the heating time based on the package recommendations.

When you make this stracciatella pizza, here are a few tips to make sure it turns out delicious:

  • The beauty of this recipe is the simplicity of the ingredients. To ensure the best results, opt for the best quality ingredients you can. For the tomatoes, look for San Marzano. They will be the most flavorful. Only use fresh basil, not dried. And grab a high-quality finishing olive oil (I love the Drizzle oil from Graza). 
  • The more you work with the pizza dough, the tougher it will become. Do your best to roll it into a circle without handling it too much. Ironically, the more you stretch it, the less stretchy it will become.
  • The stracciatella cheese can be runny. If there is too much liquid, you can strain some of it out before spooning it onto your pizza. This will help stop the pizza from becoming too soggy.

Recipe Details

Prep the Pizza Dough

To get this recipe started, you’ll first need to get the pizza dough ready. Turn on the oven and set out a large baking sheet or a round pizza pan. Drizzle a bit of olive oil onto the pan, to help keep the pizza dough from sticking as it bakes.

Next, you’ll roll out the fresh pizza dough. Sprinkle a bit of flour onto a work surface and place the dough in the center of it. Lightly dust a rolling pin with flour, if needed, and roll the dough out into a circular shape to fit your pan. Carefully transfer the dough onto the oiled baking sheet. Set the dough aside while you prep the tomatoes.

Prep the Tomatoes

To get the tomatoes ready for the pizza, add the canned tomatoes to a large mixing bowl. Use your hands or a wooden spoon to crush the peeled tomatoes. The sauce should be mostly smooth, with a bit of texture from the crushed tomatoes.

Season the tomatoes with a bit of kosher salt, to help amp up the flavor. At this point, get all of the ingredients together and be ready to assemble your pizza.

Finish and Bake Pizza

To make one pizza, spread a cup of the crushed tomatoes onto the center of the pizza dough. I like to use the bottom of the measuring cup to spread the sauce from edge to edge. 

Once the sauce is on the pizza, you’ll bake the crust. The crust should be baked through, slightly crisp on the bottom, and the tomato sauce will be steamy.

Let the pizza rest for a couple minutes, just until the steam subsides. Dollop a handful of spoonfuls of stracciatella cheese on the pizza. Garnish the pizza with a drizzle of olive oil, a pinch of flaky salt, and a bit of red pepper flakes. Slice the pizza and enjoy right away while it’s still hot.

Prep the Pizza Dough

  1. Preheat the oven to 450°F and set out a large baking sheet or pizza pan. Drizzle 1 tablespoon of olive oil on the baking sheet and spread it into an even layer. Set aside.

  2. Sprinkle the semolina or all purpose flour onto a work surface. Drop the fresh pizza dough onto the center of the floured surface. 

  3. Stretch or use a rolling pin to roll the pizza dough into circular shape. Carefully transfer the dough onto the oiled baking sheet. Set aside.

Prep the Tomatoes

  1. Pour the peeled tomatoes into a mixing bowl. Use your hands or a wooden spoon to crush the peeled tomatoes into a smooth mixture. Add the kosher salt and stir to combine.

Finish and Bake Pizza

  1. Spread 1 cup of the crushed tomatoes onto the pizza dough. 

    You will have tomatoes left over. Use the remaining tomatoes to make additional pizzas or save to make pasta sauce.
  2. Bake the crust with the tomatoes for 8-9 minutes, until the crust is baked through. Remove the baking sheet from the oven and let the pizza cool for 2 minutes, until the steam subsides.

  3. Dollop four to six 1 tablespoon dollops of stracciatella onto the pizza (you may have cheese leftover). 

  4. Sprinkle the basil leaves onto the pizza. Add a drizzle of olive oil and add a sprinkle of flaky salt and red pepper flakes, to taste. Slice the pizza, serve, and enjoy right away!
