Description

Easy weeknight sheet pan kielbasa and potatoes roasted to perfection and then served with chopped chives, honey mustard, and sauerkraut.

Ingredients
  • 1 pound mini gold potatoes, halved or quartered
  • 1 tablespoon olive oil
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon sweet paprika
  • 1/4 teaspoon black pepper
  • 2 cloves garlic, minced
  • 14 ounces kielbasa, each link cut into quarters or thirds
  • Chives, for garnish
  • Honey mustard, for serving
  • Saurkraut, for serving
Instructions

    Preheat your oven to 425°F and set out a large baking sheet.

    Add the potatoes onto the baking sheet and drizzle with the olive oil. Sprinkle the salt, pepper, and paprika over the potatoes and toss to coat once more. Roast the potatoes for 25 minutes. Take the baking sheet out of the oven and flip the potatoes so they can brown on a second side.

    Add the minced garlic to the baking sheet with the potatoes and toss to incorporate. Arrange the kielbasa among the potatoes on the baking sheet. Roast the potatoes and kielbasa for another 10 minutes.

    Divide the potatoes and kielbasa among plates. Garnish with a sprinkling of chopped chives and serve with your favorite honey mustard and sauerkraut on the side.
