This salmon burrito bowl recipe with avocado crema is the best recipe for a weeknight dinner that feels fresh and filling, but comes together so quickly! I love dinners like this for the middle of the week when things feel hectic and I don’t feel like spending my entire evening cooking. The salmon is tossed with loads of spices to give it a slightly spicy kick. Then it’s baked in the oven for 10 minutes, giving me the free time to blend the avocado crema and slice up the vegetables.

  • A: Absolutely! Prepare the salmon, crema, and the remaining ingredients and store them in the refrigerator. I’d recommend storing the warm items, like the salmon, rice, and beans, separately from the cold.  That way, you can reheat the items that are best warm, without compromising the temperature of the crema and sliced vegetables.

Is the salmon spicy?

  • It’s not too spicy, especially when paired with the rest of the ingredients in the burrito bowl. That said, if you’re spice adverse, remove the pinch of cayenne pepper from the list.

  • Keep an eye on the salmon so that it doesn’t overcook. Since the salmon is cut into bite sized pieces, they can dry out pretty quick. Give them a quick peek at 9 minutes, and if you prefer your salmon well done keep it in there for the full 10.
  • I can’t stress enough rinse your beans before you eat them. Not only will they taste fresher, it washes away any of the starch the beans have released while stored in the can.

Bake the Salmon

To get this recipe started, you’ll need to preheat the oven to 425°F and set out a large baking sheet.

Add the cubed salmon with a drizzle of olive oil, chili powder, garlic powder, onion powder, smoked paprika, oregano, a pinch of cayenne, and the lime zest into a large mixing bowl. Season with a pinch of salt and pepper. Toss to coat the salmon in the olive oil and seasonings, making sure each piece is coated. Transfer the salmon onto the baking sheet, making sure they are spaced out evenly. Bake the salmon for about 10 minutes, until each piece is baked through to your liking.

Mix the Avocado Crema

To make the avocado crema, add greek yogurt, avocados, water, lime juice, lime zest, and a pinch of salt to a high speed blender. Mix the ingredients until a smooth crema is formed. Taste the avocado crema, and adjust the salt level to your preference. Set aside until you’re ready to plate.
