This raspberry mojito mocktail is a refreshing drink perfect for a weekend brunch or an afternoon relaxing on the porch. It takes a few simple ingredients to bring this drink together, making it a perfect option for any occasion. This drink is tart, citrusy, minty, and a touch sweet. Plus, the raspberry red color is so pretty!

Ingredients

To make this raspberry mojito mocktail, you’ll need the following ingredients:

  • Fresh raspberries
  • Fresh mint
  • Simple syrup
  • Lime juice
  • Sparkling water, plain or lime flavored

What if I can’t find fresh raspberries?

  • A: Frozen raspberries would also work well! Defrost the raspberries on the counter top for 30-60 minutes, until they’re soft and squishable. Then, make the drink as directed.

Can I prepare this mocktail recipe ahead of time?

  • A: This recipe is best served right after making it, due to the sparkling water. If this mocktail is made too far in advance, the sparkling water would go flat and be less enjoyable.

What kind of sparkling water should I use?

  • A: A great rule of thumb is if you like the water on its own, you’ll probably like it in this cocktail! If you’re looking for a recommendation, La Croix, Trader Joe’s brand, or Spindrift are all brands I enjoy and would use in this drink.

What kind of mint should I use?

  • A: Did you know there are lots of different kinds of mint out there? To make a classic mojito, look for spearmint. It will have the sweet, refreshing flavor that pairs best with the lime and raspberries in this drink. 

How do you muddle a drink?

  • A: To muddle a drink, add the fruit, herbs, and a liquid (in this case honey simple syrup) to the base of a glass. Use the rounded end of a wooden spoon or a cocktail muddler and press into the fruit while turning the muddler slightly. Repeat this motion a few times until the fruits have broken down and the herbs become super fragrant.

Raspberry Mojito Mocktail Recipe Tips

When making a raspberry mojito mocktail, here are a few tips to make sure they turn out perfect:

  • When making the honey simple syrup, make sure the water is hot enough to melt the honey, but not necessarily boiling. I aim to have the water around 150-160°F.
  • This drink is easiest to make, and looks very pretty, in a tall glass. Opt for a glass that’s relatively flat on the bottom to make the muddling process easier. I’ve used these glasses from Crate and Barrel, but these ones from Amazon would also be perfect!
  • Depending on your preference, adjust the sweetness level of this drink by reducing or adding more of the honey simple syrup. If this drink will be served to someone who prefers a sweeter drink, add an extra drizzle of the simple syrup before muddling the raspberries and mint. Or, if the batch of raspberries you’re using is particularly sweet, reduce the amount of syrup slightly to make sure the mocktail is balanced.

Raspberry Mojito Mocktail Recipe Details

Prepare the Honey Simple Syrup

Before crafting this mocktail, you’ll need to make a super easy honey simple syrup. To make the syrup, add honey to a small, heat-proof mixing bowl or glass jar. Carefully pour the hot water over the honey. Stir the honey and water together until the honey has melted into the hot water. The consistency will change from very thick to a runny and smooth.  

Set the honey simple syrup aside to cool before making the mocktails. Once cooled, store any remaining honey simple syrup in the refrigerator for up to 1 month.

Make a Raspberry Mojito Mocktail

To make one mocktail, add the fresh raspberries, mint leaves, and simple syrup to the base of a tall glass. Use a muddler, or the end of a wooden spoon, and muddle the raspberries and mint. Continue to mash the raspberries and mint until the raspberries are macerated and the mint is very fragrant.

Scoop some crushed ice into the glass over the mashed raspberries. Squeeze the lime juice into the glass and top with the sparkling water. Use a spoon to gently mix the ingredients together. The macerated raspberries will incorporate into the sparkling water and turn the drink a beautiful red color.

Garnish the drink with additional raspberries and fresh mint leaves, if desired. Serve right away and enjoy! This drink would be beautiful served at brunch alongside a smoked salmon puff pastry or as a welcome drink paired with a herb and caper vinaigrette on burrata at a dinner party.
