Cheesy Pumpkin Dip

This pumpkin beer cheese is an addictive snack made with cheddar and gouda cheese, pumpkin puree, and a healthy pour of pumpkin beer. Beer cheese is such a classic appetizer and this pumpkin beer version is the perfect spin for your Fall get-togethers! Rather than taking the time to make a bechamel sauce (cooking flour, butter, and milk), this recipe jumps straight to the point by using a cream cheese base. It’s then built out by adding lots of shredded cheese, some spices, and even a bit of pumpkin puree to emphasize the pumpkin flavor. It’s an easy appetizer or snack to include in your autumn cooking lineup!

Frequent Recipe Questions

Can I make this beer cheese in advance?

  • A: Absolutely! You can make this pumpkin beer cheese ahead of time, let it cool completely, and then transfer to an airtight container. Refrigerate the cheese until you’re ready to eat. Enjoy cold or reheat the cheese in the microwave or on the stove top.

Is this recipe kid-friendly?

  • A: This recipe should only be enjoyed by adults! While the cheese is heated, it likely does not cook the alcohol out of the pumpkin beer included in the ingredients. It does not taste boozy, but it won’t be safe for consumption by children or adults who do not drink alcohol.

Pumpkin Beer Cheese Recipe Tips

When you make this pumpkin beer cheese recipe, here are a few tips to make sure it turns out delicious:

  • If you want to keep this beer cheese warm and melty while you’re enjoying it, keep the dip warm in a slow cooker or low heat fondue pot. This way it’ll stay nice and melty the entire time you’re enjoying it.
  • Shredding the cheese yourself, instead of buying it pre-shredded, is worth the time. It will taste way fresher and melt easier.
  • Be patient while the cheese is melting! Don’t be tempted to crank the heat too high to make it melt faster. You’ll run the risk of the bottom of the pan burning. Keep the heat relatively low and stir often.

The Recipe Details

To get this recipe started, get out all of your ingredients and set them on your counter. Cube the cream cheese, shred the cheeses, and measure the spices, pumpkin, and beer. Add the cheeses, pumpkin, and spices to a medium sized saucepan. Place the saucepan over medium-low heat and then slowly pour the pumpkin beer into the pan.

Use a silicone spatula to stir and combine the ingredients together. The beer cheese will be lumpy at first and become smooth as it warms up. Keep stirring the beer cheese often until the cheese is melted, about 10 minutes or so
