Celebrating the Fall Season
I love Oktoberfest.  And I especially love an obatzda recipe. If you’ve neer had Obatzda, you absolutely need to try it.  It’s a traditional German spread made with cheese, caraway, and beer perfect for spreading on your celebratory Oktoberfest pretzel.
Oktoberfest is a celebration to ring in the fall season and this dip perfectly pairs with the start of fall It’s comforting, tasty, and includes the best beverage of the season. Oktoberfest beer. This is a great appetizer recipe to make ahead!  Prepare it the day before having people over and set out a few minutes before guests arrive.  The flavors will only continue to meld and become tastier!

To make this obatzda recipe, you’ll need the following ingredients:
- Camembert or Brie cheese
- Cream cheese
- Unsalted butter
- Sweet paprika
- Caraway seeds
- Onion powder
- Oktoberfest-style beer

Is this recipe kid-friendly?
- A: It is not kid friendly. The alcohol from the beer is not cooked out, meaning this is not a safe recipe for children or anyone who does not consumer alcohol.
Can I make this recipe in advance?
- A: Absolutely! This beer cheese dip is great made ahead and stored in the refrigerator until you’re ready to eat.

Tips for Making Obatzda Beer Cheese
Are you planning on making this Obatzda recipe?  Here’s a few tips I’ve learned when making it myself:
- Make sure the cheese and butter are truly room temperature, but no cheating in the microwave!  You don’t want everything melted, but the softer it is the easier it will be to mix.
- This is best made with Oktoberfest sylte Marzen beer. But if you get a hankering for Obatzda outside of the fall, search for an amber colored lager or any lager you prefer.
- Subbing smoked paprika does not work well for this recipe.  Only use the sweet paprika and you’ll thank yourself later.

Obatzda Recipe Details
An easy, crowd pleasing dip, this is essentially all mixing! Start with the Camembert or Brie, the cream cheese, and butter. After cutting the dairy items into cubes, set aside in a bowl to come to room temperature. Once it’s at room temperature, it will be much easier to stir.
Add in your seasonings: paprika, caraway seeds, and onion powder. You won’t need to season with salt or pepper, as the saltiness from the cheese will balance it perfectly. To finish up the dip, add in the Oktoberfest beer, mixing until incorporated, saving the rest of beer for yourself!

Obatzda Beer Cheese
Description
A classic German obatzda recipe with carraway, paprika, and camembert. A perfect beer cheese for serving alongside crackers and pretzels.

Instructions

Cut the 8 oz Camembert, 8 oz cream cheese, and â…“ cup butter into 1 inch cubes and place into a mixing bowl. Cover with a towel and let come to room temperature.

Once room temperature and soft, use a spatula to combine the Camembert, cream cheese, and butter into equally distributed.

Add 2 ½ teaspoons sweet paprika, 2 teaspoons caraway seeds, and 1 teaspoon onion powder.  Mix until everything is combined.

Add ¼ cup of beer, using a spoon or spatula to mix together.

Chill until ready to serve, setting out 15 minutes before to soften slightly. Serve with pretzels, crackers, and radishes.
