Nothings Better Than Burrata

I’ve said it for years, but burrata is my favorite cheese. Every time I see it on a restaurant menu, I have to order it.  When i find a recipe on Pinterest with burrata as an ingredient, you can bet I’m making that dish over the weekend.  I love the creamy, rich taste it adds to every dish.  Its subtle taste makes it so easy to pair with a variety of flavors.  It’s a treat in cream form! Earlier this summer when going to make a typical caprese salad, I couldn't help but wonder how switching the regular slices of mozzarella with burrata would turn out.  Spoiler: it was delicious. You get all of the same experiences as you would in a typical caprese salad, but with this the cream from the center of the burrata creates a rich balsamic dressing when mixed with the rest of the ingredients.  It feels like an extra special weekend treat to spruce up your typical salad! ‍

The Recipe Details

This is as simple, if not more simple, than a typical caprese salad.  Take the time to find some beautifully ripe heirloom tomatoes.  I like to grab a variety of colors to help make the plate look that much prettier and to have a variety of levels of sweetness from the tomatoes.  On the plate you’re going to serve the salad on, you can either drizzle the olive oil and balsamic vinegar first, it helps make the plating look a bit prettier, or on top of the tomatoes directly. Break open the burrata on top, letting the cream from the center run onto the tomatoes and drizzle with your favorite store-bought fresh pesto.  Lastly, sprinkle a bit of salt and pepper.  Remember, both tomatoes and burrata love salt, so have a slightly heavier hand with the salt than you originally thought you might need.

A decadent recipe to enjoy your fresh summer tomatoes, this caprese salad is made extra tasty with the addition of pesto and creamy burrata cheese.

Ingredients
  • 3 large heirloom tomatoes, sliced
  • 3 tbsp olive oil
  • 1 1/2 tbsp balsamic vinegar
  • 1 ball of burrata cheese
  • 1/2 cup pesto
  • Sea salt and pepper
Instructions
  1. Arrange the sliced tomatoes on a plate

  2. Drizzle the olive oil and balsamic over the tomatoes

  3. Break the ball of burrata over the center of the plate

  4. Drizzle pesto over the cheese and tomatoes

  5. Season with salt and pepper to taste
