This recipe for grilled peach and burrata salad makes for a simple to make sweet, creamy, herby side dish or appetizer.
Drizzle ½ tablespoon olive oil on the inside of each peach half. Sprinkle the sliced side of each peach with kosher salt.
Preheat the grill to medium high for about 10 minutes, until it’s evenly warmed. Place the peaches cut-side down and grill for about 6-8 minutes with the grill lid down.
Once the peaches have charred on the bottom and began to soften, carefully remove them from the grill by using a pair of tongs or spatula. Let the peaches cool slightly, until they’re easily handled.
Slice each grilled peach half into quarters. Arrange the sliced peaches on a serving plate.
Break open the ball of burrata and tear it into bite sized pieces over the sliced peaches.
Drizzle ½ tablespoon of olive oil over the peaches and burrata cheese and a squeeze of fresh lemon juice. Sprinkle flaky salt and freshly ground black pepper on top. Garnish with thinly sliced fresh basil and serve right away.
