This crunchy cinnamon granola recipe is a great addition to your weekly meal preparation. It only takes a few minutes to mix together and you have a delicious, crunchy treat to add to your snacks or breakfasts. Plus, it makes your house smell amazing from the cinnamon, vanilla, and roasted nuts. 

The secret to this crunchy cinnamon granola recipe is the addition of an egg white. The protein from the egg white binds to the oats and nuts in the granola and then as it dries out it becomes hard and crunchy. It really takes a simple granola recipe to the next level!

  • Large egg white
  • Old fashioned rolled oats
  • Honey or real maple syrup
  • Raw nuts, such as cashews or almonds
  • Olive oil
  • Vanilla extract
  • Kosher salt
  • Ground cinnamon

  • A: Yes! This granola can be made up to 1 week in advance.

Does this granola recipe freeze well?

  • Yes! Transfer the cooled granola to an airtight container or zip top bag with all of the air removed. Place the container in the freezer and store for up to 3 months.

Can I add more mix-ins to this granola?

  • Definitely! You can do a mixture of different nuts or a tablespoon of chia or flax seeds before roasting the granola. Then after the granola has roasted, add ½ cup of dried fruit, such as raisins or chopped apricots, or dark chocolate chips.

Cinnamon Granola Recipe Tips

When you make this crunchy cinnamon granola recipe, here are a few tips to make sure it turns out great:

  • For a crunchier granola, opt for a crunchier nut. In my opinion, almonds are great for an extra crunchy granola. 
  • If the granola is starting to smell too toasted, and on the verge of burning, remove it from the oven early and stir it right away to begin cooling it down. 
  • Once the granola is out of the oven and begins to cool, it will start to stick to the baking sheet. Be sure to stir the granola every few minutes until the granola is cooled and no longer sticky. The more it cools, the more the granola will become crunchy and not sticky.

Recipe Details

Mix the Cinnamon Granola

Before getting this recipe started, first turn the oven on to 300°F and gather all of your ingredients and equipment. 

Next, add the egg white to a small mixing bowl. Whisk the egg white for a few minutes until it begins to froth slightly. Set the bowl of egg whites aside while you mix the rest of the granola ingredients. 

In a large bowl, add the old fashioned rolled oats, honey or maple syrup, olive oil, vanilla extract, kosher salt, and ground cinnamon. Stir the cinnamon granola ingredients together until everything is coated in the olive oil and honey or maple syrup. Then pour the frothy egg white over the oat mixture and stir to combine the ingredients together once more.

Bake the Cinnamon Granola

Once the granola is mixed, pour the cinnamon granola onto the baking sheet into a single layer. Place the baking sheet in the oven and bake the cinnamon granola for about 45 minutes, stirring a few times as it bakes. The granola and nuts should be golden brown in color and still sticky.

Sprinkle a pinch of flaky sea salt over the top of the granola and stir to combine everything together. Let the granola cool on the baking sheet, stirring every few minutes so that it doesn’t stick to the pan as it hardens. 

Once the granola is completely cool, transfer it to an airtight container to use throughout the week. It would be a great addition on top of a bowl of yogurt, as a topping for a Berry Cherry Smoothie, or as a snack on its own.

Mix the Cinnamon Granola

  1. Preheat the oven to 300°F and set out a large baking sheet.

  2. In a small bowl, add the egg white. Whisk the egg white until it begins to froth slightly, about 3 minutes. Set aside.

  3. In a separate, large mixing bowl, add the old fashioned rolled oats, honey or maple syrup, olive oil, vanilla extract, kosher salt, and ground cinnamon. Mix the ingredients together until everything is coated in the oil and honey.

  4. Pour the frothy egg white over the oats. Stir the granola one more time to incorporate the egg white.

Bake the Cinnamon Granola

  1. Pour the granola onto the baking sheet. Transfer the baking sheet to the oven and bake the cinnamon granola for 40-45 minutes. Stir the granola about halfway through and then again with about 10 minutes left.

  2. Remove the tray of granola from the oven once the oats and nuts are evenly golden brown. Sprinkle the flaky sea salt over the top and stir to combine.

  3. Cool the granola on the tray, stirring every 2-5 minutes until it’s cooled slightly, about 15-20 minutes in total. Leave the granola on the tray at room temperature to cool completely. Store the cooled granola in an airtight container or zip top bag and enjoy!
