A Bright Start to the Day

If you follow my stories on Instagram, you know I’m a huge fan of a morning smoothie, especially a smoothie where sweet meets savory.  This smoothie, more than any, is my absolute go-to.  It’s jam packed with fresh, sweet, and savory flavors, has a great variety of vitamins and nutrients, and is so easy to pull together in the morning. It’s packed with vitamin C, calcium, and dietary fibers, making it a perfect way to start the day! It’s also a great option for when you’re feeling under the weather, as the jolt of vitamin C always makes you feel better quickly.

The flavors in this smoothie are sure to make it a favorite from all smoothie lovers. It’s sweet but not too sweet, fresh, a hint of spice, and a bit herby. It’s a smoothie I can drink every morning without getting tired and always gets a thumbs up from anyone who tries it.  And who doesn’t love a pink-colored treat? The bright color is an immediate mood-lifter that will bring a smile to your face first thing of the day.

Tips For Making This Beet Smoothie Recipe

If you plan on making this raspberry and beet smoothie, here are a few tips to make it extra delicious:

  • Steamed beets can be found in the refrigerator section of some grocery stores, such as Trader Joes. It’s much easier than steaming them yourself, and makes it easy to make your smoothie faster.
  • If you prefer a thicker smoothie, lessen the amount of water to ½ or ¾ a cup. A thicker smoothie also makes for a great base of a smoothie bowl.  Top with fresh raspberries, granola, coconut, or any of your other favorite smoothie bowl toppings.
  • If you can not find frozen ginger or ginger paste, substitute with a sprinkle of ginger powder. The taste will be similar and provide the same bright bite of the frozen ginger or ginger paste.

Recipe Details

This smoothie is a balance of sweet, citrusy, savory, and earthy flavors and comes together in basically no time. To create this bright, morning, pink smoothie, you’ll blend raspberry, mango, steamed beets, mint, ginger, lemon juice, and your preferred kind of milk into a silky smooth drink.  After blended for about a minute on medium to medium-high speed until it reaches the consistency you prefer.  Pour into glasses and enjoy!  This recipe makes enough for two servings or one large serving, if you’re extra thirsty.  This is best served right away, as it will separate if it sits out too long.  If the smoothie does start to separate, stir it with a spoon or straw to bring it back together before drinking.

Instructions

  1. Add ¾ frozen raspberries, ¾ frozen mango, 2-3 steamed baby beets, fresh mint leaves, 2 teaspoons of frozen ginger or ginger paste, juice of ½ a lemon, 1 cup of milk or milk alternative of your choice, 1 cup water to a blender.

  2. Blend on medium to medium high until the ingredients are evenly combined and your preferred smoothie consistency is reached.

  3. Pour the smoothie into two glasses, or one large serving glass, and enjoy.
