This refreshing blueberry champagne mule is a delicious drink to sip on. Tart blueberries with spicy sweet ginger beer, dry sparkling wine, bright lemon juice, and herbal mint make for a balanced drink. 

This recipe makes a batch of six drinks, making it perfect for a get together with friends or family. I love this drink as a welcome cocktail for a summer barbecue. It can be made in advance and then poured and topped with champagne as guests arrive. Plus, it leaves champagne left in the bottle if someone just wants sparkling wine. This recipe is also easily doubled (or tripled) to accommodate a large number of people!

  • Fresh mint leaves
  • Fresh lemon juice
  • Vodka
  • Ginger beer
  • Chilled champagne or brut sparkling wine

Is this drink sweet?

  • A: Generally speaking, no, this drink is not too sweet. It’s more tart and refreshing. That said, if you opt for a sweeter ginger beer or a sweet sparkling wine, it can lean more on the sweet side.

What’s the best way to strain the drink into the glasses?

  • A: There are two options for straining. You could transfer the drink into a second pitcher, passing it through a sieve. Or, you can use a wooden spoon to hold back the muddled berries while they’re still in the pitcher. I prefer the second method and don’t mind if a few pieces of muddled blueberries make their way in.

Can I use frozen blueberries?

  • Absolutely! Just let the blueberries thaw in a bowl on the counter for about an hour, so that they’re soft enough to muddle.

Champagne Mule Recipe Tips

When you make this blueberry champagne mule, here are a few tips to make sure it turns out delicious:

  • Fresh lime juice will take you so much further than store-bought bottled lime juice. The bottled juice will be way more tart and throw off the balance of the drink. Fresh limes will give you true lime flavor and just a subtle amount of tartness.
  • When choosing a sparkling wine for this mule, grab one that you think you’d enjoy on it’s own! I think this drink is best made with a brut sparkling wine, but if that’s not your jam, grab a bottle of sparkling wine that has a bit of sweetness. 

How to Make a Blueberry Champagne Mule

To make a batch of these champagne mules, you’ll add the fresh blueberries, mint leaves, and lemon juice to a pitcher or large glass jar. Use a muddler or the back-end of a wooden spoon to smash the blueberries and muddle the mint together . Smash the ingredients until the mint becomes very fragrant and all of the blueberries are smashed.

To the pitcher or glass jar, pour the vodka and ginger beer onto the smashed blueberries. Gently stir the ingredients to combine everything together. Refrigerate the pitcher for at least 15 minutes, or up to 2 hours, so the drink can chill slightly and the ingredients can meld together.

Once the drink has rested slightly, strain the drink (if desired) and pour the drink glasses filled with ice, leaving a bit of room at the top for the champagne. Top each mule with chilled champagne. You can stir the champagne in, if desired, or leave it as a float on the top. Garnish each drink with a mint sprig and more fresh blueberries.
