A Refresh on The Typical Avocado Toast
One of my resolutions for this year was to create a menu of easy breakfasts that I actually enjoy eating. The criteria for these breakfasts included something I can make in less than 10 minutes, has fresh ingredients, and is fun to eat – I don’t want any more boring breakfasts! Avocado toast is a go-to breakfast for me, especially if I have any extra avocados that need to be eaten. The former me would just mash the cado, mix it with some lemon or lime juice, salt, pepper, and call it a day. The new me though, wanted to up the game – so I combined avocado toast with some of my favorite breakfast ingredients and super foods and the avocado and cottage cheese toast with pomegranate and honey was born!
When I first tried this combination I was sold – and trust me, every component brings something to the table. I’ve eaten this, or a combination of these ingredients every day for a couple weeks. I can’t get enough and am so happy to add this to my breakfast rotation.
Avocado and Cottage Cheese Toast Recipe Tips
If you’re planning on making this avocado and cottage cheese toast with pomegranate and honey, here are a few tips to make sure it’s the best:
- Don’t skip the butter on the bread. It may seem extra to double up on the dairy with butter and cottage cheese, but the combination is great, and gives an extra dose of calcium.
- For the pomegranate seeds, buy them already de-seeded. You’ll find them in the prepared fruit section of the grocery store and will save you tons of time and mess, rather than deseeding the fruit yourself.
- When it comes to the bread, pick your favorite! In these photos I opted for a wheat bread from the grocery store bakery, but white, sourdough, or multigrain would also be great!
- Not pictured in these photos is the addition of chia seeds, but they are great if added to this recipe. I love the extra bit of texture, plus the added health benefits chia seeds bring!
- If you can find it available, opt for local honey to top your toast. Local honey has extra health benefits, especially if you have allergies, as it can introduce your body to local pollen that’s used to create the honey. The introduction to local pollen in small doses has been shown to help alleviate allergy symptoms, as your body begins to build a tolerance to it!
Recipe Details
This recipe is less of a cooking recipe and more steps for assembling! Before you begin, prepare your ingredients so you can easily assemble the toast once your slices of bread are warmed. Slice your avocados, prepare your pomegranate seeds if needed, and slice the chives.
Once you have your ingredients ready, toast your slices of bread to your preferred doneness and immediately add the butter so it can begin to melt with the heat (if you’re looking for a new blender, I love this one from Breville). Spread the butter across the slices of bread and then top with the cottage cheese. Use a back of a spoon to spread the cottage cheese from end to end. Top the toast with the slices of avocado, pomegranate seeds, and chives. Drizzle with honey to your liking and serve right away to best enjoy!

Avocado and Cottage Cheese Toast with Pomegranate and Honey

A fresh take on the typical avocado toast, this perfect breakfast toast is sweet, tart, and full of creamy cottage cheese and avocados.

Toast the slices of bread in a toaster or toaster oven until your preferred level of toastiness.

Immediately after taking the slices of bread out of the toaster, divide 1 tablespoons of butter between the two pieces, spreading the butter across the bread as it melts.

Top each slice of choice with 2 tablespoons of cottage cheese, using the back of the spoon to distribute the cottage cheese across the slice of bread.

Top the cottage cheese with the slices of avocado, the pomegranate seeds, chia seeds (if using), and sliced chives evenly across each slice of toast.

Drizzle each piece of toast with honey to your preference and serve!
