Summer Peach Salad

This grilled peach and burrata salad has become my favorite dish of the summer. The grilled peaches are sweet and soft, the burrata is creamy, and the fresh basil is nice and herby. It’s a surprising dish to add as a side or a delicious salad to start a meal. It’s the perfect celebration of summertime peaches!

Ingredients

To make this grilled peach and burrata salad with fresh basil recipe, you’ll need the following ingredients:

  • Fresh peaches
  • Olive oil
  • Fine kosher salt and flaky salt
  • Burrata cheese
  • Fresh lemon juice
  • Freshly cracked black pepper

When making this grilled peach and burrata salad, here are a few tips to make sure it turns out delicious:

  • This recipe only uses a handful of ingredients, which really lets the fresh ingredients shine. Because of this, make sure you use fresh summer peaches and freshly squeezed lemon juice. It will make all the difference!

Recipe Details

Grill the Peaches

To get this recipe started, do a bit of prep to the peaches! After slicing them in half and removing the pits, drizzle the inside of each half with a bit of olive oil. Sprinkle a bit of salt onto the peaches and set aside.

Once the peaches are prepped, preheat the grill to medium high. Give the grill about 10 minutes to heat through. Arrange the peaches cut-side down on the grill. Let them cook for about 7 minutes until they char on the bottom and begin to soften. 

Carefully remove the peaches from the grill by using a pair of tongs or spatula, being gentle enough to not smush the peaches as you pick them up.  Let the peaches cool slightly, until they’re easily handled and then assemble the salad.

Assemble the Peach and Burrata Salad

To assemble the salad, slice each grilled peach half into quarters. Then arrange the sliced peaches on a serving plate. Break open a ball of burrata and tear it into bite sized pieces over the sliced peaches on the plate. 

Drizzle a glug of olive oil over the peaches and burrata cheese, plus a squeeze of fresh lemon juice. Sprinkle flaky salt and freshly ground black pepper on top of everything. Garnish with thinly sliced fresh basil and serve right away!

Grill the Peaches

  1. Drizzle ½ tablespoon olive oil on the inside of each peach half. Sprinkle the sliced side of each peach with kosher salt.

  2. Preheat the grill to medium high for about 10 minutes, until it’s evenly warmed. Place the peaches cut-side down and grill for about 6-8 minutes with the grill lid down. 

  3. Once the peaches have charred on the bottom and began to soften, carefully remove them from the grill by using a pair of tongs or spatula.  Let the peaches cool slightly, until they’re easily handled. 

Assemble the Peach and Burrata Salad

  1. Slice each grilled peach half into quarters. Arrange the sliced peaches on a serving plate.

    So good and so easy! I don’t have a grill but I tried cooking the peaches on my stove and it still turned out. The flavors are really good together and it’s super fresh!
