Spooky Spiced Halloween Rice Crispy Treats

A Classic Treat with a Little Trick

I love these spooky spiced Halloween rice crispy treats!  Similar to the classic crispy treat we all love, these ones have the added bonus of cinnamon, nutmeg, and a chocolate drizzle over the top.

It’s no secret, I love to make rice crispy treats. No one can resist the nostalgia of those sweet gooey treats. And they’re incredibly easy to make.  No need to turn on an oven or spend hours preparing. The perfect treat to make for a get-together and my favorite treat to make around Halloween. This version of the crispy treat has a little trick in it too, the spice bonus of cinnamon and nutmeg!  The spice is far from overpowering, but gives these treats a little extra bonus that make it perfect for fall.

This recipe also hold a special place in my heart with the decorations.  Using white and semi-sweet chocolate, candy eyes, chocolate cookies, and mini chocolate chips, I decorated these treats with bats, mummies, and spiderwebs. I’m no pro at icing or decorating, but these simple but effective decorations really warmed my spooky heart!

Tips for Delicious Spiced Rice Crispy Treats

Are you going to try these spooky spiced rice crispy treats?  Here are a few tips of mine to make a delicious batch of treats:

  • Use a sharp knife to get really clean edges when you slice your rice crispy treats. It’ll make your life much easier than trying to slice them with a butter knife.
  • Don’t splurge on fancy piping bags! Use sandwich-sized Ziploc bags by filling them with the chocolate and cutting off a small tip from the corner.  An easy piping bag for decorating!
  • Add a small amount of butter, half a tablespoon, to your melted chocolate before piping it onto the treats.  It will give the chocolate a glossier look and smoother consistency.
  • Not a real tip, but have fun with your decorations!  Halloween treats are about having a great time, so let your creative, spooky imagination fly!

Recipe Details

The ease of making rice crispy treats is why I love them so much! Before you begin baking, do a little prep work by lining a pan with parchment paper and greasing the pan with canola oil.  I like to use a spray can of canola oil for ease!

On the stove top, melt the butter and rice crispy treats until they are both completely melted and combined into one, gooey mass.  Partway through melting the mallow’s, add in your seasonal spices!  A touch of cinnamon and a tad of nutmeg. Once everything is melty and gooey, take the pan off the heat and add the crispy rice cereal, stirring until it’s evenly distributed.

Pour the treats into the prepared pan, and press them down to create an even layer and let them set at room temperature until they’re cooled off.  Once cool, slice into a dozen individual servings and decorate as you see fit!  I used chocolates, cookies, and candy eyes to create mummies, bats, and spiderwebs.

Description

A simple but impressive treat to make for Halloween. These spooky spiced rice crispy treats are flavored with cinnamon, a pinch of nutmeg, and finished off with cute chocolate decorations for a perfect treat - no tricks!

Ingredients
  • 2 tbsp unsalted butter
  • 3 1/2 cup mini marshmallows
  • 1 tsp ground cinnamon
  • pinch of ground nutmeg
  • 5 cup crispy rice cereal (I used the seasonal orange color)
  • White chocolate chips, mini semisweet chocolate chips, chocolate cookies, and candy eyes for decorating
Instructions
  1. Line a 9x9 tray with parchment paper and grease the pan with canola oil.

  2. In a medium saucepan, melt the 2 tablespoons of butter and 3 ½ cups of mini marshmallows over low heat, stirring constantly with a rubber spatula to encourage melting and avoid the marshmallows from toasting.

  3. After the first minute or two of melting, once the butter has melted entirely, add 1 teaspoon of cinnamon and a pinch of nutmeg, stirring it into the marshmallow mix.

  4. As soon as the marshmallows are melted and melded into a single mass, take the pan off the heat and add the crispy rice cereal. Using the rubber spatula, stir the cereal into the marshmallow mix until it’s evenly distributed.

  5. Pour the cereal treats into the prepared pan, using a second piece of parchment paper to press the treats into the sides and corners and to create an even layer.

  6. Let cool at room temperature for about an hour and then use a sharp knife to cut treats into 12 even sized bars.

  7. Melt the white chocolate and semisweet chocolate chips, adding each into respective piping bags (or Ziploc bags).  Pipe chocolate decorations onto the top, using candy eyes for mummies, chocolate cookies for bat wings, or just pure piping skills to make webs, spiders, or monsters! Enjoy!
