A delicious tomato toast with spicy spread, fresh summer tomatoes, loads of freshly shaved parmesan cheese, and herby basil make for a perfect summer snack or appetizer. It comes together in no time and is incredibly tasty.
In a small bowl, add ½ cup mayonnaise, 1 teaspoon garlic powder, 1 teaspoon sea salt, 1-2 teaspoons fermented calabrian chili (to your preferred spice level), and the juice from ½ a lemon.
Stir to combine. Taste to confirm seasoning and spice level (note: it should be spicy on its own, the spice will be toned down by the bread and tomato).
Set aside.
Thinly slice the tomato and equally divide into 4 servings.
Toast 4 large slices of ciabatta bread in your oven or toaster
Thinly slice the fresh basil leaves.
Arrange the 4 slices of bread on a serving tray or plate. Spoon the spicy mayo onto each slice of bread, spreading the mayo from end-to-end.
Fan out the thin slices of tomato onto each slice of bread.
Freshly grate parmesan cheese over the entire serving of toasts, liberally covering each slice with cheese.
Sprinkle the fresh basil over each slice. Squeeze the other half of the lemon, drizzle a small amount of olive oil, freshly crack some black pepper, and sprinkle some flaky sea salt over each slice of bread.
Serve immediately and enjoy!
