Warm, Cozy Mug of Cocoa

Spiced tahini hot chocolate is a perfect warming mug of deliciousness! This recipe makes a  cup of cocoa that is so much better than any cocoa that can come out of a packet. The warming spices added to the cocoa are super cozy and the tahini adds a sesame-flavored, richness to each cup. Plus, it’s an indulgent treat that’s perfect for the holiday season, or anytime throughout the colder months!

To make this tahini hot chocolate recipe, you’ll need the following ingredients:

  • Milk
  • Cocoa powder
  • Bittersweet baking chocolate
  • Tahini
  • Sugar
  • Vanilla extract or paste
  • Cinnamon
  • Salt
  • Nutmeg
  • Cayenne
  • Whole cloves
  • Whole star anise
  • Whipped cream, sesame seeds, and shaved chocolate for serving

Equipment

For this spiced hot cocoa, you’ll need the following pieces of equipment:

  • Medium-sized saucepan
  • Whisk (I love using a silicone whisk like this one)
  • Measuring cups and spoons
  • A kitchen scale, to measure the chocolate
  • Ladle

Recipe Tips

When you make a cup of spiced tahini hot chocolate, here are a few tips to help in the kitchen:

  • The bittersweet baking chocolate will lean on the bitter side, but it will be balanced out with the sugar added. Don’t be tempted to switch it out for a sweeter chocolate or a milk chocolate bar. Otherwise it may be too sickly sweet.
  • When it comes to picking a milk for this tahini hot cocoa, opt for the choice that you love in your coffee or tea. Chances are if you like a kind of milk in another hot beverage, it’ll be great for this recipe too! I love using oat milk or whole milk.

Recipe Details

Step 1 - Measure the Ingredients

To get started making this cocoa, first measure out the ingredients and get your supplies organized. Once the ingredients are ready, add the milk, cocoa powder, bittersweet baking chocolate, sugar, tahini, vanilla, cinnamon, salt, nutmeg, cayenne, whole cloves, and whole star anise to a medium-sized saucepan. 

Step 2 - Whisk Ingredients Together

Use a whisk to whisk the ingredients together, incorporating the cocoa powder into the milk as best you can. Then place the saucepan onto the stove top and turn the heat to medium-low.

Step 3 - Heat the Cocoa

The gentle heat will melt the chocolate and slowly bring the milk up to a delicious drinking temperature. Continue to whisk every minute or two, to ensure the chocolate doesn’t burn or stick to the bottom of the pan. Keep whisking until the chocolate has completely melted and the milk is warmed to the temperature you’d like.

Step 4 -  Serve the Cocoa

Scoop out the whole spices and then ladle the spiced tahini hot chocolate into mugs. Top each mug with lots of whipped cream, a sprinkle of sesame seeds, and a shaving of fresh chocolate. Serve right away and enjoy!

This can definitely be made in batches and kept warm on the lowest heat on the stove top or in a slow cooker. This is best consumed on the day of, so I don’t necessarily recommend making this in advance and storing it in the fridge.

Description

Rich, homemade spiced tahini hot chocolate made with lots of cocoa, warming winter spice, and toasty tahini.

Ingredients
  • 2 cups milk of choice
  • 3 tablespoons cocoa powder
  • 3 tablespoons cane sugar
  • 45 grams bittersweet baking chocolate
  • 2 tablespoons tahini
  • 1/2 teaspoon vanilla extract or vanilla paste
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • pinch of nutmeg
  • pinch of cayenne, to taste
  • 3 whole cloves
  • 1 whole star anise
  • Whipped cream, sesame seeds, and grated chocolate for topping
Instructions
  1. Add the milk, cocoa powder, bittersweet baking chocolate, sugar, tahini, vanilla, cinnamon, salt, nutmeg, cayenne, whole cloves, and whole star anise to a saucepan.

  2. Place the saucepan on a small burner over medium-low heat. Whisk the ingredients together, to begin incorporating the cocoa powder into the milk.

  3. Continue to whisk the cocoa every 1-2 minutes, ensuring the chocolate isn’t sticking to the bottom of the pan. Once the milk has warmed and the chocolate has completely melted, remove the pan from the heat.

  4. Remove the whole spices from the cocoa and ladle the drink into mugs. Top with whipped cream, a sprinkle of sesame seeds, and some grated chocolate before serving. Enjoy!
