This refreshing raspberry mojito mocktail recipe is tart, minty, and sparkling. A drink that’s made with a few simple ingredients, but makes for an impressive treat.
Add the honey into a small, heat-proof mixing bowl or glass jar.
Carefully pour the hot water into the bowl. Stir the honey and water together until the honey has melted into the warm water and reached a runny consistency. Set aside to cool before making a mocktail. Store any remaining honey simple syrup in the refrigerator for up to 1 month.
In the bottom of a tall glass, add the fresh raspberries, mint leaves, and simple syrup. Use a muddler, or the end of a wooden spoon, and muddle the raspberries and mint. Continue to mash the raspberries and mint until the raspberries are broken down and the mint is very fragrant.
Scoop crushed ice into the glass over the mashed raspberries. Pour in the lime juice and top with the sparkling water. Use a spoon to gently mix the ingredients together.
Garnish with additional raspberries and fresh mint leaves, if desired. Serve right away and enjoy!
