Fool proof pumpkin beer cheese recipe with a cream cheese base, pumpkin beer, cheddar, gouda, and a bit of pumpkin puree.

Ingredients
  • 8 ounces cream cheese, cubed
  • 8 ounces shredded cheddar cheese
  • 4 ounces shredded gouda cheese
  • 1 tablespoon pumpkin puree
  • 1/2 teaspoon sweet paprika
  • 1/4 teaspoon dried mustard powder
  • 1/8 teaspoon black pepper
  • 1/2 cup pumpkin beer
  • Soft pretzels or crackers for serving

    In a medium-sized sauce pan, add the cubed cream cheese, the shredded cheddar, the shredded gouda, and pumpkin puree. Sprinkle in the paprika, dry mustard, and salt. Place the saucepan over medium-low heat and slowly pour in the pumpkin beer.

    Stir to combine the ingredients together. It will be lumpy at first and continue to smooth out as it warms up and is stirred. Continue to stir often with a silicone spatula until the beer cheese is completely smooth and the cheese is melted.
