This oat milk hot chocolate is exactly what I needed to get in the holiday spirit this year!  It’s both sweet and bitter from the chocolate, creamy from the oatmilk, and a bit grown-up with the spice from the cinnamon and spike of amaretto.  I’m absolutely in love with it and am planning on thoroughly enjoying as many of these as I can this winter. I don’t know about you, but a hot chocolate sounds good to me at any time of day.  It goes great with breakfast, is the perfect afternoon pick-me-up, and the ultimate before-bed treat.

If you’re anything like me, I assumed making homemade hot chocolate was really difficult.  Turns out, it really couldn’t be simpler and is mostly full of ingredients that I typically keep in my pantry.  To really personalize my hot chocolate this season, I’m adding two of my favorite things: oat milk and amaretto. If you haven’t been introduced to the magic of oat milk, run out to the store right now and pick some up.  It’s the best milk substitute of all time - it actually gives the consistency of whole milk, but without all of the issues so many of us have with dairy!  Same goes for amaretto, if you haven’t given it a shot you’re really missing out.  Amaretto is an almond flavored liqueur that pairs  beautifully with chocolate. When it comes to making this recipe, it’s as simple as adding all of the ingredients, with the exception of the amaretto and whipped cream, and adding it over heat until all of the ingredients have melted and come together.  It takes about 7-10 minutes over medium-low heat, whisking consistently. Once melted, pour the hot chocolate into two mugs, add the amaretto (if desired), and top with your favorite hot chocolate toppings.  I recommend whipped cream and marshmallows, but also love to shave some chocolate over the top and serve with cookies, because why not have a little extra sugar? Description

A grown-up version of the classic hot chocolate from your childhood, made fresh on the stovetop. The perfect treat to cozy up with during the cold months!

Ingredients
  • 2 cup oat milk
  • 3 tbsp cocoa powder
  • 3 tbsp sugar
  • 1/2 tsp vanilla extract
  • pinch of cinnamon
  • 1/4 cup bittersweet baking chocolate (or semi-sweet for a sweeter drink)
  • 2 oz Amaretto liquor
  • Whipped cream and marshmallows for topping
Instructions
  1. Add the oatmilk, cocoa powder, sugar, vanilla extract, cinnamon, and baking chocolate to a small saucepan.

  2. Place the saucepan over medium-low heat, whisking frequently to stop the chocolate from melting to the bottom of the pan.

  3. Once the chocolate has melted and the ingredients have melted together, about 7-10 minutes, take the pan off the heat. Pour or ladle the hot chocolate into two mugs, add 1 oz  of amaretto to each mug, and top with whipped cream and marshmallows (or anything your heart desires). Enjoy!
