That Fajita Feel in A Guacamole
Guacamole is a classic dip that’s perfect for any occasion – from game day snacks to backyard barbecues. While it’s always delicious, have you ever thought about grilling the ingredients for a unique twist on the classic recipe? To prepare this five ingredient guacamole, first get all of your produce ready. Cut your avocados in half and remove the pits, halve the onion, chop the cilantro, and halve the lime.
Grill the avocados, onions, and jalapeno on the grill over a medium heat. The avocados will grill for about 10 minutes, 5 minutes on each side starting on the fruit side. Give the onions and jalapenos about 15 minutes, grilling on all sides.
Once all of the ingredients have cooked, let them cool slightly so they’re easy to handle. Remove the skins from the avocado, squeeze the lime halves over the top, and mash lightly. Once mostly mashed, chop teh onions and jalapenos and add to the avocado mix. Add a pinch of salt and stir to combine. Serve with your favorite chips and enjoy!

Prepare your ingredients

Cut each avocado in half and remove the pits, cut the onion in half, chop the cilantro, and cut the limes in half.
Grill the Vegetables

Preheat your grill to medium-high heat. Once warmed, place the avocado fruit side down, the onion, and the whole jalapeno onto the grill. Let grill for 5 minutes and then carefully flip each ingredient to the other side.

Grill for an additional 5 minutes and remove the avocado. Flip the jalapeno and onion to a third side, if desired, and grill for another 3-5 minutes. Remove from the grill and let cool.
Make the Grilled Guacamole

Roughly chop the grilled onion. Remove any charred pieces from the skin of the jalapeno and chop. Remove the fruit from the skin of the grilled avocados and place in a bowl.

Squeeze the lime over the avocado and mash lightly with a pestle, fork, or potato masher (I’ve used a molcajete like this one).

Add the chopped onion, jalapeno, cilantro, and a pinch of salt and stir to combine. Taste and adjust the seasoning to your liking and serve with tortilla chips or on the side of grilled chicken.
