A homemade cinnamon granola recipe that’s easy to mix together and bake at the start of the week to have for breakfasts and snacks.
Preheat the oven to 300°F and set out a large baking sheet.
In a small bowl, add the egg white. Whisk the egg white until it begins to froth slightly, about 3 minutes. Set aside.
In a separate, large mixing bowl, add the old fashioned rolled oats, honey or maple syrup, olive oil, vanilla extract, kosher salt, and ground cinnamon. Mix the ingredients together until everything is coated in the oil and honey.
Pour the frothy egg white over the oats. Stir the granola one more time to incorporate the egg white.
Pour the granola onto the baking sheet. Transfer the baking sheet to the oven and bake the cinnamon granola for 40-45 minutes. Stir the granola about halfway through and then again with about 10 minutes left.
Remove the tray of granola from the oven once the oats and nuts are evenly golden brown. Sprinkle the flaky sea salt over the top and stir to combine.
Cool the granola on the tray, stirring every 2-5 minutes until it’s cooled slightly, about 15-20 minutes in total. Leave the granola on the tray at room temperature to cool completely. Store the cooled granola in an airtight container or zip top bag and enjoy!
