A smoothie that tastes as bright as it looks, this beet and raspberry drink is mixed with lemon juice, mint, and ginger to create a delicious beverage. It’s pink sunshine in a glass, great for a refreshing breakfast or afternoon snack.
Add ¾ frozen raspberries, ¾ frozen mango, 2-3 steamed baby beets, fresh mint leaves, 2 teaspoons of frozen ginger or ginger paste, juice of ½ a lemon, 1 cup of milk or milk alternative of your choice, 1 cup water to a blender.
Blend on medium to medium high until the ingredients are evenly combined and your preferred smoothie consistency is reached.
Pour the smoothie into two glasses, or one large serving glass, and enjoy.
