A recipe for refreshing champagne mule with fresh blueberries, ginger beer, lemon juice, and fresh mint that makes enough for a crowd.

Ingredients
  • 1 cup fresh blueberries
  • 1/2 cup fresh mint leaves
  • 2 tablespoons fresh lemon juice (from about 1 lemon)
  • 3/4 cups vodka
  • 1 1/2 cups ginger beer
  • Chilled champagne or brut sparkling wine, to taste

    Add the blueberries, fresh mint, and lemon juice to a pitcher or large glass jar. Use a muddler or the back-end of a wooden spoon to smash the blueberries and muddle the mint. The mint will become very fragrant and the blueberries will become a mush.

    Pour the vodka and ginger beer into the pitcher. Stir gently to combine the ingredients together. Refrigerate the pitcher for at least 15 minutes, or up to 2 hours, so the drink can chill and the ingredients can meld together.

    Once the drink is chilled, strain the drink (if desired) and divide the mixture among glasses with ice. Top each mule with chilled champagne. Garnish each drink with additional mint and blueberries. Enjoy!
