I love guacamole as an appetizer in the Summer, and this Summer produce loaded guacamole takes it to the next level. This recipe starts with a classic guacamole with lime, cilantro, red onion, jalapeno, and garlic. Then it is topped with lots of delicious warm weather produce. Fresh corn off the cob, cherry tomatoes, jalapenos, and fresh garden herbs. To really take this recipe over the top, this guac is also topped with bacon, cotija cheese, and tajin. Every bite is a little different, depending on what toppings your chip picks up. It’s the perfect dish to bring to your next summer get together!

Mix the Guacamole

To start this recipe, you’ll first mix the guacamole base. Add the avocadoes, lime juice, and salt, to a large mixing bowl. Mash the avocados and stir the lime juice in. Add half of the chopped red onion, chopped cilantro, minced jalapeno, and minced garlic to the mixing bowl. Stir to combine the ingredients together until they are evenly distributed. Taste and adjust the salt or lime level to your preference.

Assemble the Loaded Guacamole and Serve

Now it’s time to load this guacamole up! Transfer the prepared guacamole to a serving bowl, if you’d like. Top the guacamole with the cherry tomatoes, fresh corn, cotija cheese, crumbled bacon, jalapeno slices, and remaining red onion. Sprinkle a bit of Tajin over the bowl of guacamole and then garnish with the fresh basil and cilantro leaves. Serve right away with a side of tortilla chips. Enjoy!

Note

For an easy, low mess way to cook bacon I like to bake it in the oven. Line a sheet pan with aluminum foil and set a wire rack in the pan. Arrange the bacon on the wire rack and bake for 20 minutes at 400°F.
