This whipped ricotta and blackberry toast is a delicious summertime snack or appetizer. Fresh, tart blackberries are enhanced with sweet, vinegary balsamic. Plus, creamy whipped ricotta, peppery basil, and honey. I love this recipe especially with hot honey, but if you’re spice adverse it’s also delicious with regular honey.

To get this recipe started, you’ll prepare the whipped ricotta and the blackberries. To make the ricotta, add the full fat ricotta, whipping cream, lemon juice, and a bit of salt to a mixing bowl. Whip the ingredients vigorously with a whisk for about 2 minutes or by using an electric hand mixer for 1-2 minutes. The ingredients should be equally distributed and slightly airy.
In a separate mixing bowl, place the halved blackberries, a drizzle of balsamic vinegar, and a pinch of salt. Stir to coat the blackberries in the vinegar and set aside to marinate slightly.
