Caesar-ified Green Beans
This caesar green bean salad is proof that a caesar dressing goes with just about anything. The sweet, earthy flavor of green beans goes perfectly with the tangy, creamy caesar dressing. It’s a cool, summertime salad to pair with grilled chicken or as a part of a backyard barbecue spread. The not-so-secret secret ingredient of this dish is the crushed potato chips. The chips replace the croutons or parmesan crisps typically found in a caesar salad. They are the perfect salty crunch in each bite!

Frequent Recipe Questions
Can I make this recipe ahead of time?
- A: Yes, parts of it! Steam the green beans, make the dressing, and toss both together. Then if you’re preparing this recipe ahead of time, refrigerate the green beans in an airtight container in the fridge. Crumble the potato chips over the top right before serving!
Can I substitute canned green beans?
- A: For sure! Just drain the canned green beans well before tossing them in the dressing. Just note that the canned green beans will be softer, whereas the fresh will have a bit of a crunch to them.
Caesar Salad Green Beans Recipe Tips
When you make these green beans with caesar dressing, here are a few tips to make sure it turns out delicious:
- Be sure to grab a kettle-cooked potato chip for this recipe! The crispness of a kettle-cooked chip will stand up to the dressing better than a regular potato chip can.
- If you can, freshly grate the parmesan cheese! The salty, creaminess of freshly grated parmesan cheese will take this dish to the next level!
- Personally, I like to crush the potato chips with my hands. I find it to be faster and requires less equipment. If you’re not into getting your hands greasy, you can add the potato chips to a large zip top plastic bag and smash it on the counter a few times.

Steam the Green Beans
To get this recipe started, you’ll first need to steam the green beans. For ease, look for a package of fresh green beans that are ready to be steamed in the microwave. Cook them according to the package directions. I prefer to steam them on the lower end of the cook so they have a little bit of crunch and don’t get too mushy.
If you purchase your green beans not in a steamable package, trim the ends if needed and add to a large microwave safe bowl. Add a couple tablespoons of water to the bowl and cover it with a large plate. Microwave the green beans for about 4 minutes, until cooked but still a bit crisp.
Once the green beans are steamed, remove them from the microwave. Drain any remaining water from the bowl and set aside to cool slightly for about 15 minutes.
Make the Caesar Dressing
To make the dressing, add the mayo, grated parmesan cheese, lemon zest and juice, worcestershire sauce, garlic powder, water, salt, and pepper into a medium-sized mixing bowl. Mix everything together until evenly combined, then give it a quick taste. Adjust the salt and pepper to your liking and set aside until the green beans are cooled.
Assemble the Green Bean Salad
Once the green beans are cooled and the dressing is made, it’s time to assemble! Pour half of the prepared caesar salad dressing over the cooled green beans. Stir to coat the green beans in the dressing. Continue adding more dressing until it suits your liking (and save any remaining dressing for future salads). Sprinkle the grated parmesan cheese and crumbled potato chips into the green beans. Give the salad one more stir to combine everything together. Garnish with an extra sprinkle of grated parmesan and crumbled potato chips and serve immediately! This is a great side dish along with some grilled chicken. Or pair with some watermelon salad and tomato pasta salad for a perfect lineup of sides at your next barbecue.
